Where to start

Every service has consumption and boundaries that need to be made explicit.

The calculator covers energy. Other sources require their own data and are not approximated with an average per meal.

Kitchen and energy

Electricity and fuels used for cooking, washing, ventilation and equipment.

Food and supplies

These are relevant for a broader inventory, but do not enter the energy calculator without specific data and method.

Refrigeration

Electricity consumption is included; any refrigerant leaks require separate technical data.

Waste and transport

These must be assessed with documented quantities, destinations and distances: they are not estimated automatically.

    Convert energy consumption into CO₂ with stated factors and consistent units.

    Identify actions on equipment, temperatures, timing and energy waste.

    Documented contribution

    For the remaining emissions, consider projects and documentation separate from the simple calculation.

Offsetting complements emission reduction. The estimate does not prove that a contribution or a retirement took place.

Transparent method

How we calculate emissions

For each source: annual consumption × kg CO₂ factor per unit. We only sum results with the same CO₂ indicator. We do not arbitrarily convert Smc into kWh and do not include upstream components or life cycle.

Included

Purchased electricity and on-site combustion of only the stated sources over twelve months.

Excluded

Food, beverages, refrigerants, waste, deliveries, goods, works and the full life cycle of the venue.

Primary sources, rows and limits

For electricity we use the final Italian national consumption factor for 2024 from ISPRA: 192.6 g CO₂/kWh, i.e. 0.1926 kg CO₂/kWh. For natural gas and LPG we use only the Scope 1 CO₂ component from DESNZ 2026 as a UK proxy: 2.02231 kg/m³; 0.18194 kg/kWh GCV; 1.55491 kg/l LPG. The factors do not include WTT.
